Pepes is traditional dish from Java island, especially very popular in West Java (Sunda), Indonesia. The word of pepes refers to cooking process of steaming or grilling the protein sources (meat, seafood or vegetables) with hot spices mixture and wrap it in banana leaves. A lot of pepes variants such as pepes ikan (fish pepes), pepes tahu (tofu pepes), pepes ayam (chicken pepes), and pepes jamur (mushroom pepes).
